ADVANCES IN HYPERSPECTRAL IMAGING FOR EVALUATION OF QUALITY AND SAFETY IN FOOD PRODUCTS

Abstract

Hyperspectral imaging that includes imaging and spectroscopic technology is
increasing its fame in science as a non-destructive, actual detection tool for quality and safety evaluation of food products. Hyperspectral imaging can be used to instantaneously obtain large numbers of spatial and spectral data on the products that are to be studied. This paper delivers a complete review on the recent advances of hyperspectral imaging uses in food and food products. The probable future work of hyperspectral imaging for food quality and safety control is also discussed.
